Overview
The Open Pan Evaporator is a simple, single-effect evaporation unit where liquid in an open pan is heated by steam or electric heaters, allowing water to evaporate to the atmosphere. It is used to study basic evaporation principles including evaporation rate, steam economy, and the effect of operating temperature on mass transfer. Students measure evaporation rate, heat input, and calculate steam economy and specific evaporation capacity. The apparatus serves as a foundation for understanding more complex multi-effect evaporator systems used in sugar, salt, chemical, and food processing industries.
